I've upgraded the RAM and added a PCI SSD over the years, and it's still super responsive. I'm sad at the thought of my 2010 Mac Pro maxing out with High Sierra. I love the Mojave beta on my 12' MacBook.That puts a bit of a hamper on Vega boards and some high end RX580's. Due to the lack of additional power headers (two 6 pin connectors only), going higher in a 2010 Mac Pro is best done with an additional power supply. Best bang for the buck is the RX 580.
